Grilled Gilt-Head bream


4 Amvrakikos Gilt-Head bream
4 sprigs of thyme
Half a bunch of parsley
1/2 cup of olive oil
Salt, pepper
Olive oil and lemon juice for the serving

  1. Put the grill over the coals to heat up well.
  2. Carefully oil the grill by wiping it with an oiled piece of paper towel.
  3. Grill the fish for 5-6 minutes, until the underside is well browned, turn them over with a spatula and continue to grill for another 5-6 minutes.
  4. Continue cooking for another 2-3 minutes on each side to cook them thoroughly and check if they are done by scoring them with a knife.
  5. Serve them with olive oil and lemon.
